Bloggers write great cookbooks. And I’m not just saying that because I’m INCREDIBLY BIASED. I’m saying that because I genuinely believe it. And I think I know why…it’s because food bloggers are the ULTIMATE cookbook fans.

 

We love ’em. We read them from cover to cover like novels. We hoard them (or at least I do). For some reason, we gravitate to information and stories that are told through the medium of food. Or at least, with a side of food.

After having gone through the whole process of creating my own cookbook, I only love them even more. Especially when I feel like I know the person who wrote the book, even a little bit, even just through the blogger world.

 

So recently the lovely Kate Doran from The Little Loaf (an amazing blog, a real OG of blogging) sent me a copy of her fricking brilliant book Homemade Memories. These super simple Homemade Pop Tarts are my verrry slight tweaking of a recipe from that book, and MAN OH MAN, did I love it.

Both the Homemade Pop Tarts and the book, I mean. The Pop Tarts are delicious – I added some cinnamon to the pastry and skipped making them whole-wheat because I guess I’m just a bad person. They’re gorgeous: buttery, simple, crisp, easy to make, just a straight up delight.

 

The book, I loved even more. Full of Kate’s great, friendly writing, her stories, and a bunch of recipes that I could easily work my way through and never be unhappy, or feel like anything was missing. PB&J Arctic Roll? Come on. Amazing.

So if you love baking, or cookbooks, or blogs as much as I do, then you should definitely grab a copy. It will make your week, I swear!

 

Now in the meantime I’m going to go and dip a nutella-filled Homemade Pop Tart into my coffee and finish watching this episode inside the Actor’s Studio with Dustin Hoffman. Good. Flippin’. Times.

Homemade Toaster Pastries from Homemade Memories
 
Easy homemade pop-tarts.
Author:
Serves: 6
Ingredients
  • 1⅓ cups (200g) plain flour
  • 1 tbsp caster sugar
  • 1 tsp cinnamon
  • pinch of salt
  • 1 stick (115g) butter, cold
  • 1 tsp cider vinegar
  • ¼ cup cold water
  • Jam, nutella, or whatever you want to fill them with.
  • 1 egg, beaten
Instructions
  1. Place the flour, sugar, cinnamon and salt into the bowl of a standing mixer fitted with the paddle attachment.
  2. Cut the butter into small cubes, and then add to the mixer, and mix on a low speed until there are large flakes of butter.
  3. Mix the vinegar and water, and then slowly add a little at a time until the mixture looks like it's about to come together in a dough. Tip the dough out onto a work surface, knead the dough a few times to bring it together and divide into two pieces.
  4. Wrap in plastic and rest for 30 minutes in the fridge.
  5. Roll each piece out to a 3-4mm thick rectangle, and cut out 6 equal sized rectangles from each piece.
  6. Place a tbsp of nutella or jam onto half of the rectangles, brush the edges with beaten egg, and then top with the remaining pieces pressing the edges firmly to seal.
  7. Slash the tops to let steam out, then place on a lined baking sheet.
  8. Bake for 15-20 minutes of until golden brown, then leave to cool for a while and eat!
