It’s Monday. Maybe we spent the whole weekend doing other things. Maybe we were laughing about this Pinterest article, I don’t know. One way or another we didn’t get around to thinking about the week ahead. Specifically, how we would feed ourselves first thing in the morning during that week.

 

So we know have a serious breakfast deficiency. Well guess what? In 5 minutes’ time that problem will be SOLVED my disorganised amigos!

This here is a small-batch (<— buzzword) of granola, and it’s crazy easy to make. When I say five minutes, I mean it. And it’s not a crappy, ‘this’ll do’ version of granola – this isn’t just a quick way to liven up some oats.

 

It’s actually really tasty, flavoursome, crunchy, delicious granola. In 5 minutes! WIN.

This recipe is the ‘things I always have in my cupboard’ version. But you hardly need me to tell you that granola is open to variation. Just think of your additions as ‘things that need toasting’ and ‘things that don’t’.

 

So feel free to add other nuts, seeds and things like that at the start, and then stir through dried fruits or delicate things (like coconut – I prefer my coconut untoasted) at the end.

If you’re anything like me during the week, finding 5 minutes is hard enough, so you can take my word for it that this is a solid spend of time.

 

And once you’ve spent that five minutes on this, you get to dig in to the spoils for the rest of the week. I love that feeling of accomplishment on a Monday. Enjoy it!

5 Minute Brown Butter Honey Granola
 
A super quick weekday granola.
Author:
Serves: 1½ cups
Ingredients
  • 2 tbsp butter
  • 3 tbsp honey
  • 1 cup (110g) whole rolled oats
  • ½ cup (50g) flaked almonds
  • 2 tbsp sesame seeds
  • pinch of salt
Instructions
  1. Place the butter into a large non-stick frying pan, and cook until it turns light golden brown.
  2. Add in the honey and stir to combine, before adding the rest of the ingredients.
  3. Cook, stirring, over a low-medium heat, until the nuts and oats become toasted and golden (about 2-3 minutes).
  4. Once it looks ready, spread the granola out onto a lined baking sheet and leave to cool completely.
  5. Stored in a sealed jar, it will keep well for at least a 7-10 days.
