Good Friday to you, my lovely readers! Today is bittersweet, like the most perfect little dark chocolate truffle. I’m sad that cookie week is coming to a close, but I’m happy because I’m sharing this incredible list of all the cookies that I want someone to make and deliver to me pre-Christmas!
All my favourite shortbreads, chewy cookies, gingerbread people, sugar cookies, biscuits hanging from the tree, and plenty of chocolate! I hope that this list helps you in your quest for the perfect Christmas cookie – I hope you spend your weekend baking.
Sugar Cookies ALL the ways. Love it.
Brown Butter Rum Cannoli. An entire dessert in a cookie!
Triple Chocolate Truffle Cheesecake Cookies. Sheer insanity.
Lemon Sugar Cookies. Simple but awesome.
Peanut Butter Pretzel Bars. My favourite thangs, in bar? Yes.
Salted Dark Chocolate Truffle Cookies. More chocolate amazingness.
My Chocolate Chip Pretzel Cookies. I just love those, you guys.
Chocolate Truffle Peppermint Crunch Cookies. There is a chocolate theme emerging.
Salted Brown Sugar Toffee Cookies. I just adore a buttery, salty, brown sugar cookie.
Chocolate Pretzel Candy Cane Bark. Anything with candy canes at this time of year, please.
Halva Rugelach. Sesame and honey filled shortbread, oh hell yes.
Pistachio Thumbprint Cookies with Blackcurrant Jam. These are just different enough to excite me.
Chocolate Malted Oatmeal Cookies with Hazelnuts. Malt deserves to be in more cookies.
Peppermint Crinkle Cookies. I tried to make these once and FAILED. But they look amazing.

I made shortbread today, how lazy was that? I’m hoping to get more motivated tomorrow. It’s tough in this heat to think about baking. :)

*gasp* those lemon bar cookies look out of this world….! Oddly enough, I feel kind of full looking at all these beauties! But then again, that might also be because I “grazed” with some molasses gingerbread and homemade whipped cream.. ;)
