No Bake S’mores Chocolate Crackle Cake

S'mores Chocolate Crackle Cake // The Sugar Hit

Would you take a look at this beauty? This gorgeous bohemoth is the no-bake cake of oven-less cook’s DREAMZ!

It’s a gooey, sticky, crunchy chocolate crackle base (kind of like a rice crispy, but not), topped with a cumulonimbus cloud of marshmallow frosting piled on top. Scorch that sucker? And you’ve got yourself a No Bake S’mores Chocolate Crackle Cake.

I just spent a few minutes googling cloud-types to make sure that cumulonimbus was the right kind – it is. But man, clouds are so interesting. I highly recommend a quick trip down that internet rabbit hole.

I love that really top-level, layperson science – like cloud types, and naming constellations, and different kinds of dinosaurs. Give me a slice of this cake, and a couple of hours of the Magic School Bus, and I’m in mid-90s heaven.

Since I love grade-school level science, is it any wonder that I also love grade-school level baking? Because, aside from the blowtorch (which I would have been itching to get my hands on as a kid), this cake could easily be made by anyone from around 8 years and up.

The base is a melt-stir-press operation, and the topping is just egg whites and sugar, heated over a pan of simmering water and then taken off the heat and whipped. So maybe a little adult supervision required, but still very easy.

And the cool thing is that, as the adult, you get to swoop in at the end of the day and torch that sucker – which is easily the most fun part of the whole operation.

I developed this recipe for Kidspot late last year – the recipe can be found here. Go ahead and check it out! And happy Monday to ya.

xx Sarah.
