Roasted Strawberry Marshmallow Milkshakes

Ingredients
  • ½ pound (250g) strawberries
  • 1 cup large marshmallows
  • 1 tsp vanilla bean paste or extract
  • 1 cup (250ml) vanilla ice cream
  • ½ cup (125ml) milk
  • optional: whipped cream, extra strawberries or maraschino cherries, to serve
Instructions
  1. Preheat the grill/broiler to high and line a baking sheet with baking paper (use foil if you're worried about the paper catching fire, or if you have a gas grill).
  2. Wash and hull the strawberries, cut them into halves and arrange on one side of the baking sheet. Place under the grill for a few minutes, just to get the strawberries going as they take longer than the marshmallows.
  3. When the strawberries are just beginning to look a darker red, scatter the marshmallows on the other side of the baking sheet, and place under the grill until the marshmallows are scorched, and the berries are juicy and dark. Set aside to cool.
  4. Place the cooled roasted berries and marshmallows (you will have to scoop + scrape these) into a blender, with the vanilla, ice cream and milk, and blitz until smooth.
  5. Serve with a dollop of cream and a cherry or a strawberry, if desired.
