Blueberry Pancake flavoured Granola!

Ingredients
  • 2 cups (200g) oats
  • 1 cup (100g) quinoa flakes
  • 1 + ½ cups (185g) whole pecans
  • ½ cup (55g) flaked almonds
  • ½ cup (50g) chia seeds
  • ½ cup (125ml) maple syrup
  • ¼ cup (65ml) runny honey
  • 1 tbsp vanilla
  • 1 tsp cinnamon
  • 2 tbsp olive oil (or coconut oil is good too)
  • 2 tsp flax seed oil (optional)
  • 1 cup (125g approx) dried blueberries
Instructions
  1. Preheat the oven to 375F/180C and line a baking sheet with greaseproof paper.
  2. Place all the oats, quinoa flakes, pecans, almonds, and chia seeds into a large bowl and stir to combine.
  3. In a measuring jug, whisk together the maple syrup, honey, vanilla, cinnamon, and oils, until incorporated.
  4. Pour the liquid into the dry ingredients and stir together very well. Dump the mixture onto the lined tray and spread out in an even layer.
  5. Bake for 25 minutes, stirring everything around halfway through the baking time.
  6. At the end of the baking the mixture will have browned, but may still feel a little soft - don't worry it will crisp up as it cools. Leave to cool on the tray completely, then stir through the blueberries and store in an air-tight container.
