I just love a griddle cake at breakfast time. Today is Friday, the weekend is coming up, and I thought I’d nudge you in the right direction and put all of my most favourite recipes for Pancakes, Waffles and French Toast in the one place!
Please, please do yourself a kindness this weekend, slow down and have a late leisurely breakfast. Even if you have work to do (I do), even if you’re waking up in the middle of the night (me too) and even if you’re on a diet (aren’t we all?) juuuuuuuuust do it. Trust me, it’ll do your soul good.
These cocoa crepes are a very recent favourite – chocolate at breakfast is something I always aspire to.
Pikelets are little known and under appreciated, but these cornmeal ones are delicate, flavoursome and just the ticket whether they’re topped with jam and cream or served with bacon and maple.
Hazelnut and oat pancakes! Hearty, and there’s something so country-side chic about these. They make me want to wander through an orchard and pick plums to stew and serve with them. Wanna come with?
French toast, how I love thee. Custardy, soaked bread, fried in butter and in this case, dusted in Scandi-inspired sugar. These too are crying out for a splodge of compote!
More nuts in pancakes! This time pecans, and they work beautifully with this very indulgent vanilla maple caramel sauce. These are almost New Orleans Praline-inspired. It’s a good thing.
Beer waffles anyone? Light, crisp, malty, dare I say even beer-y? Serve these with my maple-cherry compote or go rogue and add some bubbling cheese and hot sauce or slices of crispy cho
I know, I know, the Christmassiness of this photo will probably get on some of your nerves. I, on the other hand, have ALREADY started listening to Christmas carols because I’m a Chrismas junkie and I love it. Nevertheless, regardless of the time of year, these Swedish pancakes with cranberry and orange are heavenly.
Cinnamon Spelt Pancakes with Apples, anyone? If you’re in the Northern hemisphere, then the season is probably just about crying out for something apple-y and cosy and warm. Can I come and visit you?
Speaking of apples, this Single Lady Pancake makes the absolute most of them. Serve the shredded, tart apple pancake with plenty of salted caramel, a scoop of ice cream, and all of your staying-at-home-in-your-sweatpants-sass.

I like to slice my brioche THICK when I use it to make French Toast. I don’t get my hands on a buttery French loaf very often, you see, so when I do I go all out. This rosemary scented roasted rhubarb with maple was a total winner.
Olive Oil waffles! If they sound strange, it’s because they are a little, but so so delicious for it. The strong, bitter olive oil taste is the perfect compliment to whatever sweet sauce you slather on these. I chose a dark chocolate sauce and some coconut ice cream.
Oh, these quick belgian waffles. So quick, so simple, so delicious, so buttery and so hard to resist! If you can get your hands on pearl sugar, you need to turn to this recipe ASAP for a lightning speed Belgian Waffle fix.
Honey Nut Granola Pancakes, I do love you. Crunchy, oat-y, sweet and full of nubbly nuts, with a splodge of greek yogurt and a handful of blueberries you almost have me thinking that pancakes are healthy. But who cares? Not me, honey nut granola pancakes. Not me.

So I’ve been hearing about you and this wonderful blog for weeeeeeks now! And for some reason it has taken me this long to finally get here. I think it was fate because I be needing this weekend breakfast inspiration! My goodness, this post is unbelievable! I don’t quite know why, but your opening paragraph and then all of these photos made me think of this quote that I found on pinterest, which makes me laugh constantly, “Dieting is easy. It’s like riding a bike. And the bike is on fire. and the grounds on fire. and everything’s on fire because you’re in hell.” I don’t know why I thought of that, but for whatever reason, even though I don’t know you at all, I thought you would enjoy it. I’m going to have so much fun picking one (or two…or three) of these to make this weekend!

Why did I have to stumble across this page? Now I’m going to have to have a go at pretty much all of the recipe’s darn it. we are big on pancakes in this house but are keen to get into waffle making. is there a style of waffle maker you recommend? they don’t seem to be as popular in England as they are in America. I’m thinking of getting the rectangular shaped Cuisinart one. would love a Heston Blumenthal one but cant justify the price!
