Ok, so the ricotta i see here in the US is not crumbly like that… do tell! How do I get ricotta like that? The only I see is in a platic tub and is wet. While it is very yummy, it’s defintely not what is called for in this recipe. Is that ricotta salata? I vaguely remember seeing that once…
Hey Chris – that tubbed ricotta is bogus! We get it here in Australia too. You need to hit up a proper Italian deli and get some fresh ricotta. Ricotta salata is a totally different beast again, it’s quite hard and salty, almost like a parmesan cheese and not what you want here.
