Marinated Strawberries, Nut Crunch + Yoghurt

Ingredients
  • 500g (1lb) strawberries
  • Juice of ½ lemon
  • 1-2 tbsp maple syrup
  • ½ cup almonds
  • ¼ cup pepitas
  • pinch of sea salt flakes
  • 1 tbsp powdered sugar
  • Greek yoghurt, to serve
Instructions
  1. Wash, hull and quarter the strawberries, and then place them in a large bowl, and toss with the lemon and maple syrup - adding more or less syrup depending on the sweetness of your berries.
  2. To make the nut crunch, preheat the oven to 200C/400F and line a baking tray with baking paper.
  3. Chop the almonds, and then place in a small bowl, and toss through the pepitas, salt and sugar. Add ½ tsp water (I know you will think this is not enough, but it is) and then toss again, quickly. This will be just enough to make the sugar cling to the nuts.
  4. Spread the nuts out onto the baking sheet, and bake for 5 minutes, or until golden brown and crunchy. Leave to cool on the tray.
  5. To serve, dish up ¼ of the strawberries to each person (I like to do this in a jar, but bowls are cool too) top with a dollop of greek yoghurt and scatter over a pile of nut crunch.
