Pine Lime Splice Popsicles!
Serves: 6
  • 2 cups pineapple juice (from 1 large pineapple)
  • Juice of 1 limes
  • ⅔ cup (165ml) thickened cream
  • 2 tsp caster sugar
  • 1 tsp vanilla bean paste
  1. Mix together the pineapple juice and lime juice and divide evenly between 6 holes of a popsicle mold.
  2. Place into the freezer for about an hour, and then remove and insert popsicle sticks into the centre of each mold.
  3. In a small bowl, whip the cream, sugar and vanilla together, just until very soft peaks form. Divide evenly between the popsicles, on top of the pine-lime layer.
  4. Freeze for at least hours. Serve.
