Simple Lemon Loaf
 
 
A dense, sharp, simple lemon loaf cake.

Ingredients
  • 2 cups (300g) plain flour
  • 2 tsp baking powder
  • 1 cup (225g) caster sugar
  • 1 stick + 6 tbsp (200g) butter
  • 1 cup (250ml) buttermilk
  • 1 tsp vanilla bean paste (or extract)
  • 2 eggs
  • 2 lemons
Instructions
  1. Preheat the oven to 180C/350F and grease and line a loaf pan.
  2. Place the plain flour, baking powder and caster sugar into a large mixing bowl and set aside.
  3. Melt the butter in a medium saucepan over a low heat. When the butter's melted, remove the pan from the heat, and add the buttermilk and vanilla bean paste, and stir them well.
  4. Crack in the eggs, and add the zest and juice of the lemons and beat together.
  5. Add the wet ingredients to the dry ingredients, and stir until just combined.
  6. Scrape the batter into the loaf tin, and bake for 30-40 minutes, or until golden brown, and a skewer or thin knife comes out clean.
