Loaded Veggie Nachos (aka Cheap Eats!)

Ingredients
For the black bean chili:
  • 1 tbsp olive oil
  • ½ large red onion, chopped (about ½ cup)
  • 2 fat cloves garlic, finely sliced
  • pinch of salt
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • pinch of chilli powder (or more to taste)
  • 14 oz (400g) can of diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp brown sugar
  • 1 tbsp apple cider vinegar
  • 14oz (400g) can of black beans (or any other bean or legume, I just like black beans)
To assemble & serve the nachos:
  • corn chips
  • grated cheese or queso fresco
  • diced avocado, lime, coriander/cilantro, fresh tomato, diced red onion, sour cream, yoghurt, spring onions, any kind of guac or pico de gallo.
Instructions
  1. In a deep saucepan, heat the olive oil over a medium heat.
  2. Add the chopped onion and garlic, and a fat pinch of salt, and cook until the onion begins to soften.
  3. Add in the dried spices and cook for another 30 seconds, and then pour in the can of tomatoes. Cook for a few minutes, until the mixture reduces a little and gets slightly thicker.
  4. Add in the oregano, sugar and vinegar and stir well, and then taste. At this point you can add more salt, sugar or vinegar to balance the mixture.
  5. When it tastes good, add in the black beans and cook for a few minutes, until they're heated through. Set the mixture aside until you're ready to make nachos! *If it's going to be a long time, but the chili into the fridge*
  6. To make the nachos, lay out a layer of corn chips on a well-lined baking sheet. Scatter over the black bean chilli, making sure to distribute it evenly in small dollops. Scatter over grated cheese (if using), and then if you're a baller, do another layer each of chips, beans and cheese.
  7. Place into a hot oven (about 200C/400F) until the cheese is melted and bubbling and the chili is hot.
  8. To serve, scatter the 'chos with whatever toppings you like, and then plonk on the table and let everyone dive in!
