My Favourite Buttermilk Waffles
 
 
The best, easiest, crispy on the outside, fluffy in the middle Buttermilk Waffles.

Serves: 8 Waffles
Ingredients
  • 1 + ¾ cups (260g) plain flour
  • 2 tbsp caster sugar
  • 2 tsp baking powder
  • ½ tsp bicarb soda
  • 2 eggs
  • 1 + ¾ cups (435ml) buttermilk
  • ¾ stick (85g) butter, melted
  • Fruit, whipped cream, and syrup to serve
Instructions
  1. Preheat your waffle iron, according to the manufacturer's instructions.
  2. Place the dry ingredients in a large mixing bowl, and make a well in the centre.
  3. Crack in the eggs, and beat with a fork to break them up.
  4. Add in the buttermilk and melted butter, and stir with a wooden spoon until everything is combined. It will be lumpy - that's a good thing.
  5. Bake the waffles in your waffle iron according to the manufacturer's instructions. I like to cook these at a medium-high setting.
  6. Keep the waffles warm in a low oven, and then serve with whipped cream, fruit and syrup.
