My Favourite Buttermilk Waffles

Serves: 8 Waffles
- 1 + ¾ cups (260g) plain flour
- 2 tbsp caster sugar
- 2 tsp baking powder
- ½ tsp bicarb soda
- 2 eggs
- 1 + ¾ cups (435ml) buttermilk
- ¾ stick (85g) butter, melted
- Fruit, whipped cream, and syrup to serve
- Preheat your waffle iron, according to the manufacturer's instructions.
- Place the dry ingredients in a large mixing bowl, and make a well in the centre.
- Crack in the eggs, and beat with a fork to break them up.
- Add in the buttermilk and melted butter, and stir with a wooden spoon until everything is combined. It will be lumpy - that's a good thing.
- Bake the waffles in your waffle iron according to the manufacturer's instructions. I like to cook these at a medium-high setting.
- Keep the waffles warm in a low oven, and then serve with whipped cream, fruit and syrup.
