The Single Lady Apple Pancake - tastes so good, you'll want to be alone forever.

Ingredients
1 small green apple
1 egg
⅓ cup flour
¾ tsp baking powder
¼ cup milk
pinch of salt
pinch of cinnamon
1 tsp of butter
ice cream, butter, maple syrup, caramel sauce or whatever you like to serve!
Instructions
Grate the apple on the wide holes of a grater, and place into a small mixing bowl. You can peel it if you want, but I don't bother - so much of the goodness is in the skin!
Add the egg to the bowl and mix with a fork until the egg is well beaten.
Add all the remaining ingredients, except the butter, and stir well with your fork, until everything is pretty much combined. Don't worry about a few lumps.
Heat the butter in a small non-stick skillet. Once the butter foams, you're ready to start cooking your pancake. You can either do as I did and make one big one, or make two or three smallish pancakes - it's up to you.
Either way, dollop in the pancake batter and cook over a medium-low heat until the batter looks set around the edges and the bottom is nice and brown. You may not see bubbles appearing on the surface, because of the apples in the batter.
Flip the pancakes over, and give them another minute until nicely browned on the bottom, and serve with whatever you want! I went with a drizzle of caramel sauce, a few slices of fresh apple and big ol' scoop of vanilla ice cream. YUM.
