Caramel Apple Pancake
 
 
Caramel Apple Pancake, with brown sugar, cinnamon and rum soaked raisins.

Ingredients
  • ¾ cup flour
  • 2 tbsp white sugar
  • ¾ cup buttermilk
  • 1 tsp baking soda
  • 3 eggs
  • 2 tart apples
  • ⅓ cup raisins
  • 3 tbsp rum (optional)
  • 1 tbsp butter
  • 3 tbsp brown sugar
  • 1 tsp cinamon
Instructions
  1. Preheat the oven to 180C/375F
  2. Place the flour, sugar, buttermilk and baking soda into a mixing bowl.
  3. Separate the eggs, and add the yolks to the flour mixture, mixing everything together until smooth.
  4. Whisk the whites until stiff peaks form and set them aside.
  5. Peel and slice the apples into thin half moons.
  6. Place the raisins and the rum into a small bowl, and leave to soak.
  7. Melt the butter in a 9 inch cast iron skillet, add the apples and cook until they begin to soften. Add the brown sugar, cinnamon and the raisins.
  8. Cook for an extra few minutes, while you fold the egg whites into the rest of the batter.
  9. Pour the batter over the apples in the pan, and place the whole skillet into the oven for 15 minutes. Carefully flip the pancake onto a plate, scoop out any apples that have stuck to the pan and serve!
