Feather-light Buckwheat Waffles
 
 
Super, light, delicious, gluten free waffles with the delicious taste of buckwheat.

Ingredients
  • ¾ cup (110g) buckwheat flour
  • ¼ cup (40g) corn flour (cornstarch)
  • ¼ cup (40g) brown rice flour
  • 3 tbsp nut meal (I used almond)
  • 2 tsp baking powder
  • 1 tsp bicarb soda (baking soda)
  • 2 eggs
  • ¾ cup buttermilk
  • ½ stick (50g) butter, melted
  • 2 tbsp honey (or maple syrup)
  • vanilla
Instructions
  1. Turn on your waffle maker to preheat.
  2. Place all the dry ingredients into a large mixing bowl.
  3. Separate the eggs and add the yolks, along with the buttermilk, melted butter, honey and vanilla to the dry ingredients. Stir together until well combined.
  4. Whisk the egg whites with a pinch of salt until they reach stiff peaks.
  5. Fold the egg whites carefully into the batter mixture, trying to retain as much air as possible.
  6. Now, make the waffles according to the instructions with your waffle maker! Mine uses ⅓ cup of batter, and they baked perfectly on the medium setting. Once they are golden brown and beautiful, they're done!
  7. Now go, the syrup is calling your name.
