Happy New Year everybody!

 

It’s New Year’s Day where I’m sitting right now, and the sun is shining, and I suddenly feel like I’m talking like a radio presenter? I’ll stop that now. Nevertheless, it is the first day of 2014, I’ve got my goals for the year written out, and I’m pumped! Why am I pumped? Because I’m not hungover!

I’m not a ‘New Year’s Eve celebrator’, nor am I much of a drinker these days, so last night I watched Adam’s Rib with my parents, waited for my boyfriend to get home from work, and then went to bed! PARRRRTAAAYYYY! So now, I’ve woken up fresh as a daisy and I just ate a big fat pancake for breakfast.

 

What’s with the sandwich, then? I hear you ask…

Well, my darling internet friends, I wasn’t always this way. Indeed, I used to raise hell on the regulars, so I totally know what it’s like to wake up on the first day of the year and feel like there is a tiny army of dwarves trying to mine their way out of your head. You’re dehydrated, you’re nauseous, you’re somehow simultaneously exhausted and completely unable to continue sleeping.

 

And that’s where I come in.

You stumble into the kitchen, and there am I, with a gentle smile and a steaming cup of black coffee (or however you take it). I know you need caffeine, and then probably an OJ or something just to introduce your stomach to the idea of consuming non-booze things again.

 

Then, if you’re anything like me, in about 15 minutes you will be RAVENOUS.

But don’t worry, because one of these babies is COMIN’ ATCHA! It’s got slices of smoky delicious ham (leftover from xmas), a big pile of mustardy coleslaw, a neat slather of mayo, and then – and this is the most important part – a huge, crispy, crunchy pile of salty delicious hot chips.

 

Hangover? More like HAND OVER all the money you’re going to want to pay me for bringing you this sandwich in your time of need.

Not a fan of ham? Use whatever’s in the fridge – this is all about using up leftovers. Couldn’t be bothered making slaw? Use store-bought. Can’t handle the mayo? Leave it out, or replace it with some chutney or mustard. Not a fan of hot chips? JUST KIDDING, EVERYONE IS!!!

The Leftover Hungover Sandwich

 

An original recipe by Sarah Coates for The Sugar Hit.

Serves 2

 

INGREDIENTS:

For the sandwich:

4 slices of good bread

mayo

ham

coleslaw (recipe below)

hot chips (recipe below)

 

To make this sambo, you just pile ham, coleslaw chips and mayo onto bread. It’s awesome. If you want to make your own coleslaw and hot chips here are my tried, tested, and really super easy instructions:

 

For the coleslaw:

1/4 of a small white cabbage

1 tbsp grain mustard

2 tsp cider vinegar

2 tsp olive oil

 

Finely slice the cabbage and then make a dressing by whisking the remaining ingredients together. Toss, and serve.

 

For the chips:

2 small potatoes

canola oil

Preheat the oven to 400f/200C. Slice the potatoes into 1 cm chips, and place in a saucepan with cold water. Bring to the boil and boil for 3 minutes. Once the potatoes are on the heat, place the oil in a baking dish, and place in the oven to heat up. Drain the boiled chips, and place them carefully into the preheated oil, and then bake for 25 minutes, before turning them and giving them another 10 minutes. BEST OVEN CHIPS EVER.
